Power Pancakes

Makes 40 mini pancakes or 8 medium pancakes

Makes 40 mini pancakes or 8 medium pancakes

Ingredients

  • 2 eggs (110g)

  • 1 ¾ cup (14 fl oz) almond milk -or preferred milk 

  • 3 tbsp (16.5g) maple syrup 

  • 1 tsp (5g) vanilla extract 

  • 1 ¼ cup(150g) all-purpose flour 

  • 2 tsp (8g) baking powder 

  • 1 tsp  (5g) baking soda

  • 2 tsp (10g)kosher salt 

  • 2 scoops (72g) of Super Greens 

Instructions

  1. Mix all dry ingredients in a large bowl

  2. Mix all wet ingredients in a separate bowl

  3. Whisk wet ingredients into dry ingredients until thoroughly mixed.

  4. Heat a large skillet over medium heat, lightly grease the skillet with oil or butter

  5. Using a spoon, dollop mini pancakes into skillet

  6. Cook for 2-3 minutes until pancakes start to bubble

  7. Flip pancakes and cook 1-2 minute more

  8. Repeat the process until all batter has been used
