Power Pancakes
Makes 40 mini pancakes or 8 medium pancakes
Makes 40 mini pancakes or 8 medium pancakes
Ingredients
2 eggs (110g)
1 ¾ cup (14 fl oz) almond milk -or preferred milk
3 tbsp (16.5g) maple syrup
1 tsp (5g) vanilla extract
1 ¼ cup(150g) all-purpose flour
2 tsp (8g) baking powder
1 tsp (5g) baking soda
2 tsp (10g)kosher salt
2 scoops (72g) of Super Greens
Instructions
Mix all dry ingredients in a large bowl
Mix all wet ingredients in a separate bowl
Whisk wet ingredients into dry ingredients until thoroughly mixed.
Heat a large skillet over medium heat, lightly grease the skillet with oil or butter
Using a spoon, dollop mini pancakes into skillet
Cook for 2-3 minutes until pancakes start to bubble
Flip pancakes and cook 1-2 minute more
Repeat the process until all batter has been used
